Обязанности:

• Conducts daily briefing and monthly meeting with his staff and attends weekly departmental briefing.
• HACCP trained and implement in the stewarding department.
• Maintaining and implement safety regulations and standards
• Checks Daily Functions and ensures that all F&B Operating Equipment are ready and available for the functions.
• Ensures proper staffing in all sections, outlets and functions.
• Ensures high standard of cleanliness in the food production areas.
• Issues correct mis-en-place, par stocks in all sections/outlets of the hotel.
• Monitors, maintains and inventory equipments and its losses and breakages of F&B Operating Equipments, and takes actions to minimize the same.
• Ensures that all areas are kept clean and organized, high standards of health and safety; personal hygiene and sanitation among staff.
• Ensures proper use and control of all cleaning supplies and materials.
• Plans and controls overtime and / or extra hours of the staff.
• Prepares the annual vacation forecast.
• Stay up to date with latest products, equipment and techniques for proper cleaning.
• Ensure proper ordering, usage and storage of chemicals in hotel.
• Maintain and implement proper system for recycle and workable garbage collection and storage (HACCP) standards
• Prepares and issue performance evaluations for all stewards in a timely fashion.
• Develop and maintain a close and effective working relationship with all supporting departments.
• Reports to the Executive Chef.
• Manage the performance of direct reports through monitoring, coaching, training and conducting performance reviews.
• Perform other assigned duties that contribute to the Company's mission and objectives.
